Lemon Rice

Ingredients
1. Row rice -2cup
2. Oil -2tbsp
3. Peanuts -2tbsp
4. Cashew nuts -6-8
5. Asafoetida -1pinch
6. Urad dal -1tsp
7. Chana dal -1tsp
8. Turmeric powder -1tsp
9. Lemon juice -1tsp
10.Cumin seeds -1tsp
11.Curry leaves -8-9
12.Mustard seeds -1tsp
13.Curry leaves -6-8
14.Red chilli -2
15.Salt
Method
1. Wash and soak raw rice in water for 10mins. Cook it with 4cups of water in a pressure cooker for 2whistles on medium flame. And keep aside this.
2. Heat 1tbsp oil in non-stick pan on medium flame. Add peanuts and cashews for roasting. Stir fry them until they turn golden brown. And keep aside.
3. Add remaining oil in the same pan. Add mustard seeds, when they start to crackle, add a pinch of asafoetida, cumin seeds, urad dal, chana dal and saute until they turn light golden brown.
4. Add curry leaves, 1 dry red chilli. And saute them.
5. Add steamed rice, fried peanuts, cashews, lemon juice and salt. Mix all the ingredients properly.
6. Cook for 1-2 for minutes.Server it.
